Ingredients
2 count large eggs
1 cup fresh spinach (chopped, if leaves are large)
0.5 tsp turmeric powder
1 tbsp coconut oil or ghee (clarified butter, a legal SCD fat)
1 pinch sea salt (optional, to taste)
1 pinch black pepper (Black pepper will significantly improve bioavailability of the anti-inflammtory curcumin in turmeric by up to 2,000%..)

Instructions

In a small bowl, whisk the eggs with the turmeric powder, pinch of black pepper, and an optional pinch of sea salt until well combined.

Heat the coconut oil or ghee in a non-stick skillet over medium heat.

Add the chopped spinach to the hot skillet. Sauté for 1-2 minutes, just until it wilts down.

Pour the whisked egg mixture over the wilted spinach in the skillet.

As the eggs begin to set, gently push them around the pan with a spatula until they are cooked to your desired consistency – soft and fluffy is often easiest on the gut.
