Ingredients

  • 1.5 cup blanched almond flour (for the toast base)

  • 0.5 tsp baking soda (ensure it's just baking soda)

  • 0.25 tsp sea salt (for the toast base)

  • 2 large eggs (beaten, for the toast base)

  • 2 tbsp honey (for the toast base)

  • 0.25 cup unsweetened applesauce (ensure no added sugars or illegal ingredients)

  • 2 tbsp apple cider vinegar (for the toast base)

  • 4 slices of SCD Almond Flour Toast (from Part 1 of this recipe)

  • 2 large eggs (for the French toast batter)

  • 0.25 cup homemade almond milk (ensure no illegal additives, or thinned homemade 24-hour fermented yogurt)

  • 1 tbsp honey (for the French toast batter)

  • 0.5 tsp pure vanilla extract (ensure no added sugar or alcohol)

  • 0.25 tsp ground cinnamon (for the French toast batter)

  • 1 pinch sea salt (for the French toast batter)

  • 2 tbsp ghee or coconut oil (for cooking)

  • 0.5 cup fresh berries (for serving, optional)

  • 1 tbsp honey (for serving, optional drizzle)

    Preheat your oven to 350°F (175°C). Lightly grease a small loaf pan (about 8x4 inches) or line it with parchment paper.

    In a medium bowl, whisk together the blanched almond flour, baking soda, and sea salt.

    In a separate bowl, whisk the beaten eggs, honey, unsweetened applesauce, and apple cider vinegar until well combined.

    Pour the wet ingredients into the dry ingredients and mix until just combined. The batter will be thick.

    Spoon the batter into the prepared loaf pan and smooth the top.

    Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

    Let the loaf cool completely in the pan before carefully removing it. Once cool, slice it into ½-inch thick pieces, similar to bread slices.

    In a shallow dish, whisk together the 2 eggs, homemade almond milk (or thinned yogurt), honey, vanilla extract, cinnamon, and sea salt until well combined. This is your French toast batter.

    Dip each slice of the almond flour toast into the egg batter, making sure both sides are coated but not overly saturated.
