Ingredients
2 cup almond flour (Finely ground)
0.5 tsp baking soda (Only baking soda is allowed, while baking powder is not due to starch)
0.35 tsp salt (Fine sea salt)
2 tsp ginger (Fresh grated)
1 tsp cinnamon (Ground)
0.5 tsp nutmeg (Ground)
0.5 cup Coconut oil (Or butter unsalted, softened or ghee)
0.5 cup honey (Pure honey)
2 Large egg (Only egg yolks, discard whites)
1 Tsp Vanilla

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the almond flour, baking soda, salt, ground ginger, cinnamon, and nutmeg.

In a separate bowl, cream together the softened butter (or ghee), honey, and vanilla until light and fluffy.

Beat in the egg until fully combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.

Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.

Flatten each cookie slightly with the back of a fork or your fingers.

Bake for 9 to 11 minutes, or until the edges are lightly golden brown. The centers should still look soft.
