Ingredients

  • 2 cup Beef (Pre-cooked, diced or shredded beef (such as pot roast or slow-cooked steak). Use plain cooked beef to ensure SCD compliance.)

  • 6 cup Beef bone broth (Ensure it is pure bone broth with no added starches or sugars.)

  • 2 Carrot

  • 2 stalk Celery

  • 0.5 Onion

  • 1 tablespoon Olive oil

  • 1 teaspoon Salt

  • 0.25 teaspoon Pepper

  • 2 tablespoon Parsley (Freshly chopped)

Instructions

    Finely dice the onion, peel and dice the carrots, and dice the celery. Keep the vegetable pieces small for quicker cooking and easier digestion.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

    Pour in the beef bone broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let simmer for 10-12 minutes, or until the vegetables are very tender.

    Add the pre-cooked beef, salt, and pepper to the soup. Simmer for an additional 2-3 minutes to heat the beef through.

    Taste and adjust seasoning if necessary. Ladle the soup into bowls and garnish generously with fresh chopped parsley before serving.
