6 cup Beef bone broth (Ensure it is pure bone broth with no added starches or sugars.)
2 Carrot
2 stalk Celery
0.5 Onion
1 tablespoon Olive oil
1 teaspoon Salt
0.25 teaspoon Pepper
2 tablespoon Parsley (Freshly chopped)

Finely dice the onion, peel and dice the carrots, and dice the celery. Keep the vegetable pieces small for quicker cooking and easier digestion.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

Pour in the beef bone broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let simmer for 10-12 minutes, or until the vegetables are very tender.
